cheesy bacon cauliflower

ingredients

1 head cauliflower
4 oz. organic cream cheese, cut into cubes
1/2 cup organic sour cream
1/4 cup green onions, minced
1/4 cup parmesan cheese, grated
6 slices bacon, cooked until very crisp, then crumbled
1 cup sharp cheddar cheese, grated
1 dash sea salt

flavor burst 1 drop black pepper vitality essential oil


Preparation
Cut up the cauliflower and cook in boiling salted water until it's barely soft.
Drain. Either leave in pieces, or mash slightly, leaving some chunks.

Cook bacon; pat excess grease with paper towels; then crumble.

Combine cauliflower, cream cheese, sour cream, green onion, Parmesan, and 3/4 of the crumbled bacon. Put the mixture into a glass or stoneware casserole dish (with a lid) greased with organic butter.

Top with sharp cheddar and the rest of the bacon.

In a glass bowl, mix sea salt and black pepper essential oil. Sprinkle on top of casserole.

Bake with the lid on until bubbling, about 35 minutes. (I take the lid off for the last 10 minutes to brown the top.)
